Number of Sets

When doing the 12 lesson course, I used to perform each exercise for one set only, except for the dip, of which I performed 3 sets. It worked fine because each lesson has so many exercises that work the muscles from every angle possible, besides training twice per day. Right now I am on the perpetual lesson and I was thinking of adding a few exercises I enjoyed were much to it. I think I should perform these added exercises for 2 or 3 sets. What you guys think?
